Protein Packed Banana Bread

If you love banana bread but aren’t a fan of the lack of protein and abundance of fats and carbs that your typical slice has, try out this quick and easy macro friendly version. 

What You Will Need:

  • 2 scoops protein powder 
  • 30g PB2
  • 1 tsp baking powder
  • 60g egg whites
  • 175mL unsweetened almond milk
  • 2 bananas (~180g)
  • Chocolate chips (optional) 

What to Do: 

In a large bowl, mix together 2 scoops of protein powder (chocolate, peanut butter or a banana cream flavor work best) with 1 tsp baking powder, 30g PB2 and stevia. Then add 60g egg whites and 175mL unsweetened almond milk. In a separate bowl, mash two bananas (~180g) and then add the mashed banana to the rest of the mix.  Heat the bananas in the microwave for up to 30 seconds before mashing if they are too ripe.

Add the mixture to a sprayed loaf pan and bake at 350 for 35-40 minutes.  You can add chocolate chips if you have the macros for them, or just add them when you go to eat a slice by microwaving it for 20 seconds, allowing a couple chocolate chips to melt into each slice. This is also a better way to track the chocolate chips more accurately.
